Trinidad Tomato Choka Recipe

Ingredients
10 medium tomatoes on the Vine(these are usually more flavorful)
1 Red Onion finely chopped
4-6 cloves of Garlic crushed or very finely chopped
2 Pimento Peppers finely chopped
1/2 Habanero Pepper or 1/2 tsp Hot sauce
Salt and Pepper to taste
3 Tbls Olive Oil
1 tsp Parsley
Handful of Cilantro
Directions
Slice the Tomatoes horizontally in to two halves
Place under a Broiler until they start to blacken(usually takes about 15 mins)
Meanwhile heat a medium sized pot or large frying pan for 3-4 mins
Turn heat to medium and place the oil in the pan
Fry the onions for 3-4 mins
Add the garlic and cook until they brown, but don't let them burn
Once tomatoes are brown turn them over and brown them on the other side
Add the Tomatoes, cilantro, salt and Pepper and Parsley to the pan
Use a wooden spatula to break up the Tomatoes; this should be easy as they should be very soft
Add a little water to create a sauce
Simmer and stir for about 5 mins
Let simmer a further 20 mins so the flavors can sink in
Serve with Trinidad bake and Roast Pork(Optional)
