Cold-Buster Soup! Carrot/Ginger/Orange

Ingredients:
1/2 Red Onion
5 Garlic cloves minced
3 stick celery chopped
Thyme 5 sticks
3 cups carrots chopped
3 cups chicken broth
1 inch Ginger peeled
1 inch Turmeric Peeled(or 1 tsp powder)
1/3 cup cold pressed orange juice
1/3 cup Coconut milk
1 tsp black pepper
Salt to taste
Directions
Saute onion and celery at medium heat until soft
Add garlic and cook for 1-2 mins until slightly browned
Add Chicken broth, ginger, turmeric, pepper, thyme
Bring to a boil and then let simmer for 20 mins
Remove Thyme sticks and scrape off the leaves in to the soup
Place soup in a high speed blender and blend on high for 1 minute until smooth
Transfer back to stove top
Add coconut milk and stir until blended
Add Orange juice
Serve warm
