Coconut Crusted Zucchini Money


This is a super healthy and tasty way to eat your veggies, plus the kids love it too!

Zucchini is technically a fruit, but still jam packed full of good stuff.

It has a very low glycemic index, is high in antioxidants and essential nutrients: Potassium, Manganese, Vitamin C and A.

This recipe contains egg whites and coconut too, so you need up with a good amount of protein and healthy fats.

One Zucchini gives you 12g Protein, 9g of fiber and your dv of Vitamin C, plus plenty of health Omega 3 fatty acids.

Ingredients

1 large Zucchini

1/2 cup Coconut flakes

2 tbls grated Parmesean(optional)

Salt and Pepper to taste

1/4 tsp parsley

1/4 tsp cayenne

1 egg(or 2 egg whites)

1/3 cup of coconut milk(or milk of choice)

Directions

Heat Oven to 400 degrees

Slice Zucchini in to very thin pieces

Mix coconut, parmesan, salt, pepper and cayenne together in one bowl

Beat the egg and coconut milk in to another bowl

Coated each zucchini slice first in the liquid mix and then in the coconut flakes.

Place on a baking tray

Bake for 7-8 minutes on each side or until golden brown and crispy.

Let cool before serving
