Sheppards Pie with Cauliflower Mash


I LOVE this dish and I have successfully tricked my kids in to eating Cauliflower mash instead of Potatoes every time! They also don't mind or notice veggies in the Mince mix(carrots, peas, celery and onion) because it's such a tasty dish

Ingredients

For the Mince

2 Lbs Beef

1 Yellow Onion diced

3 sticks celery chopped

½ cup Peas

2 carrots chopped

6 sprigs Thyme

2 tbs flour

2 tbs butter

2 tbls Tomato paste

2 tbls Worcester sauce

½-1 Habanero Pepper minced

1 cup Beef or chicken stock

1-2 tbsp Extra Virgin Olive oil

Salt & Pepper to taste

For the Mash

2 Cauliflower Heads OR/

6 Russet potatoes cut in to small pieces and 1 Cauliflower

1 tsp Parsley

1 tsp Paprika

1/3 cup Cream Cheese

1 cup Grated English style Cheddar Cheese

½ tsp Garlic powder

2 egg yolks

2 tbls of Milk of choice

¼ tsp Salt & Pepper to taste

Directions

Boil the potatoes 10-12 mins

Steam cauliflower for 12-15 mins(I prefer steaming to preserve nutrients)

Sauté carrots in olive oil for 3 mins on med heat

Add onion and celery for another 3 mins

Add Beef and cook 5-7 mins until Browned

Add the Habanero Pepper, Tomato paste, Thyme, Pepper, Stock and Peas

Cook on low heat for 10 mins

While the mix simmers, transfer your Cauliflower(or potatoes) in to a food processor or use an immersion blender to mash your mash. Include the eggs, salt, cream cheese, and garlic

Add a little milk and mix until thick and creamy

Turn up Heat of Mince mix to Medium and add Butter, once it melts, add the flour and mix with a little water until the mixture has a medium thick sauce. This makes it more juicy and not dry once it’s baked

Mash the cauliflower OR potatoes(depending what you used) with garlic powder, salt, pepper, parsley, egg

Grease a large Glass or Ceramic Dish

Pour the meat and veg in and pat down

Cover the mixture with the Mash

Bake for 30 mins then remove from the oven and cover with the grated cheese

Sprinkle the Paprika and Parsley on top

Broil for 3-4 mins until cheese starts to brown

Cover and let sit for 30 mins before serving so the pie can set
